Flu and Cheesy Chicken Spaghetti

Well today is a bust. Why you ask? Because I have two guys at home who are running fevers, have coughs and stuffy noses, and feel like poo. Yep, we've got sickness here at happiness house. So the guys are laying down for a nap while I try to clean/organize a little bit around the house. My poor guys! I hate it when they are sick! I'm going to make them some chicken noodle soup tonight. Oh and just so I don't leave you with nothing, here is a recipe I made today!

Cheesy Chicken Spaghetti
1 box spaghetti
4 chicken breasts, boiled
3 cups Velveeta
1 can cream of chicken soup
1 can chicken broth
3 ribs celery, chopped
1/2 onion, chopped
1 stick butter
1 tsp garlic salt
2 tsp pepper
1 tbsp Italian seasoning mix

boil chicken and chop. Boil spaghetti and set aside. Chop celery and onion and cook in butter. Once tender, add chicken, spaghetti, Velveeta, soup, and broth. Heat until Velveeta is melted. Serve!

I made this all in one pot and just kept switching things to boil. I love one pot meals! Josh recommended I add broccoli next time. Broccoli! Who is this kid?!?!? Anywho that's the recipe. Hope you like it!

Chicken Gravy and Biscuits

I made something new for dinner and I wanted to post the recipe on here. This recipe could be served for breakfast too, but I wanted to have it for dinner. Jon and I have taste tested and it is good!

Chicken Gravy and Biscuits
2 cans cream of mushroom soup
2 packets country gravy mix
2 1/4 cups water
2-4 chicken breasts
can of biscuits

Mix soup, gravy mix, and water in crockpot. Put in chicken (can put it in while frozen) and make sure is coated in mix. Cook on low 4-6 hours. At 5 hours, I shredded my chicken and cooked it for another hour. You can do this at the end though. Serve over biscuits!

chicken and dumpling soup

Well I didn't accomplish much today! I did finish my reserved sign frames for the wedding and Jon and I rearranged our bedroom, but other than that, not much! Hey it was a vacation day!!! I did manage to make a new recipe! Jon and I both liked this one!

Chicken Dumpling Soup
2 quarts chicken stock
2 cups frozen mixed veggies
1/2 cup chopped mushrooms
1/2 onion, chopped
1 1/2 cups flour
3 tbsp shortening
3/4 tsp salt
2 tsp baking powder
3/4 cup milk

Fry mushrooms and onions in some butter in the bottom of a big soup pot. Once tender, add chicken stock and frozen veggies. Simmer for 30 minutes. Mix flour, salt, baking powder. Cut in shortening until lumpy. Slowly stir in milk. Increase heat on soup pot and bring to a boil. Once boiling, drop in spoonfuls of the dumpling mix. Simmer for 20 minutes, 10 uncovered, then 10 covered. Eat!

Creamy Chicken

This morning, we went David's for breakfast. He and Kate made us french toast and sausage! Yea! We stayed there for a bit and just chatted. Goodtimes, goodtimes indeed.
We got Josh's shoes for the wedding today and picked him up a couple pairs of shorts for this summer. They didn't have them in Jon's size, so he's going to get them at a later date. Now they just have to get their suits!
We watched Cloudy With a Chance of Meatballs today and it was hilarious!!! Highly recommended! It was hysterical! We rented it, but I'm very much wanting to get it on dvd to own!
This afternoon, we laid a couple of blankets in the yard and enjoyed the beautiful weather. I read some Harry Potter and the guys played Stratego and Othello. I played my first game of Othello today. I lost. :( Oh well, plenty of time to win! It was just too nice outside not to go out and enjoy it. It was around 80 degrees and there was a light breeze. Under the shade of all our trees it was lovely. I'm so glad we have so many full grown trees at our house. More raking in the fall yes, but that just means we can jump in gigantic piles of leaves!
Tonight, we will chill out and maybe watch Adventures in Babysitting. The guys loved my recipe, so here it is.

Chicken Meatball Soup

I made this soup for lunch today and realized I have never posted the recipe. I don't know why I haven't posted this yet. Jon loves this soup and it is a staple in my recipe arsenal. It is a variation of chicken noodle soup and it's super easy to make. Once again, it's one I make up, so I don't have exact measurements, but I will do my best. I apologize for the lack of picture, but I still don't have a way to upload photos.

Chicken Meatball Soup
1 lb ground chicken
1 cup bread crumbs
2 tsp season salt
2 cups frozen mixed veggies
1/2 head cabbage, chopped
2 quarts chicken stock
pepper and garlic salt to taste

Pour stock in a big pot and set heat to medium/high. Mix chicken, bread crumbs, and season salt. Form meatballs and drop into stock. Bring to a boil. Add cabbage and reduce heat. Simmer until meatballs and cabbage are done. Add noodles, mixed veggies, pepper and garlic salt. Cook until noodles and veggies are tender.

This soup can cook for quite a while before you add the noodles, so don't worry if it simmers for a while. My magic ingredient in this soup is the Rachel Ray Chicken Stock. I love her stock!!!! I literally buy it by the case! I don't know what I will do if it is discontinued. This soup (or really any soup I make) just isn't the same without it!

Crockpot Chicken Tacos

We tried a new recipe last night and it was a huge hit! I love my crockpot! I don't know where this recipe came from originally, it has been everywhere lately. We made this and had it on soft taco shells.

Crockpot Chicken Tacos

1 can cream of chicken soup
1 cup salsa (we used mild)
3 boneless chicken breasts
1 packet taco seasoning

Put chicken in the crock pot. Top with taco seasoning. Mix the soup and salsa and pour over the chicken. Cook on low 8 hours. Once done, shred the chicken and serve.
