Hi!
We had a great weekend visiting my parents. It was so nice to get back to the county! We visited the fair and I got fair cookies! FYI, the White County Fair doesn't have much, but it does have the best cookies in the history of cookies. Oh so good. In other news, I have a pinched nerve in my back (self diagnosed of course, lol), so I'm lying low this week due to extreme back pain. It's getting better, but slowly. Here are some pictures from this weekend in the meantime.

A Sarah and Josh Kind of Day
I had today off so it was just me and Josh. Jon and I had decided to let him empty his piggy bank to buy something (he always has to put 1/2 of any money he gets into his piggy bank and 1/2 into his bank account, that way he's always saving). This morning after Jon headed to work, Josh and I got ready and headed to...Target! I needed a Target trip. :) Josh got a Lord of the Rings Lego set, then we had Penn Station for lunch. We headed home, did some obligatory cleaning (don't you always feel like you have to clean something on your day off?) then settled in for a couple movies (Jimmy Neutron and Alice in Wonderland) while Josh built his legos. It was a good day. :)

Recipe Trifecta
Tomato Pie
1 pie crust
1 cup shredded sharp white cheddar
1 cup shredded mozzarella
1/4 cup feta cheese
1 cup mayo
10 roma tomatoes, sliced
1 bunch fresh basil, chopped
1/4 cup red or green onion, diced
Heat oven to 350 degrees. Bake pie crust 10 minutes. Mix cheeses and may. Layer tomato, onion, basil, and cheese mix. Add salt and pepper to taste. Bake 20 minutes. Eat! Hint: to make mini pies, cut circles of pi crust and make in a muffin pan. Just distribute the filling evenly.
Creamy Cowboy Dip
2 cans corn
1 can rotel
1/2 green pepper, chopped
3 green onions, chopped
2 tbsp jalapeno pepper juice or 1 tbsp juice and 1 tbsp chopped pepper
1 cup shredded cheddar
1 cup sour cream
1 cup may
Mix it up and serve with taco chip or frito scoops
Kitchen Sink Salsa
1 can corn
1 large tomato chopped
1/2 green pepper chopped
1/2 onion chopped
1/4 cup apple cider vinegar
1 tbsp olive oil
2 tbsp sugar
Mix and eat. Hint: Kitchen Sink Salsa + Creamy Cowboy Dip = OMG Delicious!!!

A Rut
Jon and I are totally in a rut. I feel like those vultures in The Jungle Book.
Yep, Jon and I are the vultures.
Seriously though, what do you do to get out of a rut? I'd love to go be outdoorsy, but it's way too hot to do anything outside. I'm already looking forward to fall simply because I'm sick to death of living in a drought ridden 100+ degree wasteland! I think we need to get out of the house. Maybe a weekend getaway. But where? And when? And what? Harumph.... So....What you wanna do?

Hash Brown Casserole
1 can 98% fat free cream of chicken soup
1 16 oz container fat free sour cream
2 cups shredded cheddar
2 tsp onion powder
26 oz bag frozen hash browns
1 large can french's onions
pepper to taste
Mix everything up, except onions. Bake at 350 for 50 minutes. Top with onions and bake another 10 minutes. Done!

Happy 4th of July
What a great day! Jon and I were off work. Always awesome. Also, it's Sonnie's birthday. Happy Birthday Sonnie!!!! We went and had some pool time with Sonnie and Phil followed by lunch at Chili's with them. If you go to Chili's, get the blackberry tea. It's AMAZING!!!!!
Now we are home and Jon's napping. I'm getting in some quality bloggy time whilst watching The Hills. Yes I am 30 and watch The Hills. And Laguna Beach. What can I say, I love LC! I think we should be friends. Anywho, that's what we've been up to. Oh! And Mike and Michelle got me an awesome vintage video camera! you can't get film for it anymore, but I love seeing it on my shelf! I'm up to 3 vintage camera's in my collection and I can't wait to get more! Here is the video camera and it's case between my Willow tree and owl.
I love it! I think I need to get a shelf to put all my camera's together. Anyway, that's about it for now.
